Flavorful tomatoes for savory blends in winter

I had been missing the rich deep flavorful tomatoes of summer, so when I saw dried tomatoes in the bulk bin at the supermarket I decided to give them a try. I’ve been impressed with the flavor they give to savory smoothies. They’re not quite the same as a nice summer tomato, but I’ve found them to be a lot better than the bland winter tomatoes that show up at the store. I put them in the V8/gazpacho-inspired blends that I described a while back.

  1. Do you increase the amount of water when you used dried tomatoes? A lot of recipes I’ve seen for sun dried tomatoes requires soaking them in hot water for a period of time prior to use. My guess would be that this would not be neccessary w/ a powerful blender? You experince?

    • Yes, I do increase the amount of water, I guess I should have mentioned that explicitly. And I don’t soak them; the Vitamix has no problem blending them to bits.
