Just in time for Thanksgiving… I’m with family for the holiday. My mom usually makes this cranberry sauce (or relish) with a food processor, but this year she couldn’t find the food processor because her Vitamix has displaced it in the kitchen. She was worried that the Vitamix would over-process the cranberries into a puree, but by pulsing it the cranberries came out perfectly. This sauce is best to make the day before you serve it so that everything steeps together.
1 peeled tangerine plus half the peel
12 oz cranberries
½ cup sugar plus more to taste
spices: allspice, cinnamon, and nutmeg, or five-spice powder
Put ingredients in container in order listed. Set Vitamix to variable speed seven, then pulse* repeatedly while continually using the tamper to push ingredients into the blades. Process until cranberries are chopped, but not fully pureed, about ten pulses. Scrape out into a bowl, cover, and let it sit in the fridge. Waiting overnight is best, but a few hours is also OK.
*If you have a Vitamix without the pulse switch, no problem—just flip the on-off switch up and down quickly.
